Peanut Butter Banana Berry Smoothie

Summer is getting into full swing and smoothies are a cool answer to hot days. Smoothie time is one of my favorite times of the day. My daughter excitedly runs around the house yelling to everyone and our neighbors that it’s time to drink the smoothies. And I love it because it makes us take a break from work and sit for a few minutes as a family, relax and drink together. The Peanut Butter Banana Berry Smoothie is our current go-to smoothie of choice because berries are widely available and in-season. It’s deliciously balanced, looks beautiful and kid-approved.

Ingredients

  • 1 cup oat milk (or any milk you like)
  • 2 tbsp of non-fat plain Greek Yogurt or Skyr
  • 2 tbsp of peanut butter (or any nut/seed butter you like)
  • 1 banana
  • 1 cup of fresh blueberries 
  • 2 stalks of kale 
  • 1 cup of frozen mixed berries 
  • 1 cup of ice 

You will need 

  • Blender
  • Measuring spoons (or you can eyeball) 
  • Measuring cups (or you can eyeball) 

Recipe – makes 4 servings

  1. In your blender, start by adding the 1 cup of your milk of choice
  2. Add the heaping tbsps of yogurt and nut/seed butter of your choice
  3. Add the 1 cup of blueberries and the 2 stalks of kale
  4. Top it off with the 1 cup of mixed frozen berries
  5. Flip on your blender, start on the lowest setting and gradually increase the speed
  6. Add the crushed ice to the top and let it blend into the mixture
  7. Blend until silky smooth
  8. Pour, sip and enjoy!
